Pork loin today is so lean that can become very dry when cooked, so in this class you will learn to brine pork chops for extra moisture and flavor, and cook them to the best temperature to keep them moist. This very special cake, which Shelley learned at one of the first French restaurants she worked at in New York, Le Cherche Midi, has several parts so we are keeping the first course, whole steamed Artichokes, very simple.

ST: Knife Skills

You know you need this! A must do class if you want to make cooking more fun and approachable. In this class you will learn how to sharpen and use a chefs knife and a paring knife. We will cover many cutting techniques with vegetables and fruit while making the dishes in the follow menu. 

MENU:
Gazpacho
Lentils with Caramelized Onions 
Celery and Apple Salad with Almonds and Parmesan 
Fresh Orange Dessert with candied Orange Zest, Grand Marnier, and Chocolate

When: June 29th, 1-4:30pm

Where: Shelley’s Table, Lambertville

Limit: 8 cooks
