ST: French Techniques: Bouillabaisse

Transport yourself to the Mediterranean Coast of France for the famous fish stew: Bouillabaisse. We will make a fish stock with fish bones to flavor the stew along with onions, saffron, fennel, tomatoes and garlic, and then add the fillets to boil briefly at the end of the cooking. the rest of the menu will also be made in class.
